Baxter Deck Ovens combine specially designed heating elements with high-quality atmospheric steam to deliver the exact finish operators want. These ovens are also versatile; each deck operates independently, allowing for simultaneous cooking of products at vastly different temperatures. Independently controlled settings to heat the top and bottom of each deck provide additional control.
The deck oven’s aesthetic design includes a full glass door that gives customers a clear view of what is being baked. In addition, each deck has simple-to-use digital controls, making it easy for the operator to have precise control over the bake.
Baxter’s reliable heating elements are designed and sized to provide an optimal, even bake, and with high-capacity steam easily available and controlled during the bake cycle, operators can easily manage the crispiness of crusts to ensure perfect results. Because independent elements are used to generate steam, oven temperature is recovered quickly. The system does not retain excess water, so there is no boil-off effect at the end of a bake cycle when steam is not wanted.
Additionally, due to shrouded elements and single water and drain connections, the oven’s steam system is easy to maintain. No water is held inside the oven, which prevents rust from developing, and vent and drain connections can be conveniently combined for multiple stacked units.
Because each deck in the oven operates independently, it is easy to use different temperatures to quickly bake two different types of products at the same time, such as thick-crust and thin-crust pizzas. Operators can also individually set the amount of top and bottom heat within each deck to better control the bake of the product in each. The oven interior can withstand temperatures as high as 550 degrees Fahrenheit.
Deck ovens are available with one to four decks to allow for variety in product size and production needs. Each deck is sold separately and can be stacked up to four decks high. Stand bases are available in several heights to optimize the deck oven package.
Manufactured in the USA, the Baxter Deck Oven is constructed with a high-temperature-reinforced, 5/8"-thick stone baking surface and an oven door that opens inward so that hot surfaces do not protrude into the kitchen. Moreover, the glass door is split, making cleaning easier and eliminating the need to remove the glass to clean the interior.
