With their ADAPTIVE.Clima technology, Unox ChefTop and BakerTop models are designed to have the ability to monitor all of the cooking parameters continuously within an oven. According to Unox, this technology allows its ovens to understand the actual amount of food that has been loaded into the cavity, thereby being able to automatically optimize the cooking process according to those quantities.
ADAPTIVE.Clima is also intended to allow, at the end of the cooking process, the user to store the current cooking data and be able to repeat this process with the guarantee of a same result every time. Unox states that with ADAPTIVE.Clima, it is chefs who set the standard of their cuisine, with the promise that the ChefTop and BakerTop models will give culinary staff consistently excellent results, every day and in every production condition.
What is it for?
The humidity in the cooking chamber is determined by the size of the product batch, with manual intervention possible by the user such as opening of the oven door. ADAPTIVE.Clima is designed to compensate for this and thereby ensure the correct relationship between the parameters in the cooking program and those actually obtained. Users can then set the cooking process they like and be sure that ADAPTIVE.Clima is intended to obtain the desired result regardless of the number of trays and the moisture released by the products inside the cooking chamber. With ADAPTIVE.Clima technology, end-users do not have to differentiate between a full load and a single pan load ever again. Unox further claims that ADAPTIVE.Clima also allows the user to store data of how the final cooking process actually takes place, taking into account any data, including loss of temperature during loading, the loading time and opening the door during the process. Once stored in the oven’s controls, the process will reliably repeat itself again and again with, ensuring a consistent result thereby conforming to the cooking standards set by the chef.
How ADAPTIVE.Clima works.
ADAPTIVE.Clima technology constantly monitors the real values of the chamber temperature, chamber humidity and core temperature of the food, automatically reacting if the measured values are different from those set by the user.
The quantity of steam produced is automatically adjusted on the base of the quantity of moisture released by the food and the oven reacts to events such of the door opening, quickly recreating the desired values.
ADAPTIVE.Clima was also developed to allow Unox ovens to monitor all the interventions and corrections made by staff in order to memorize the real cooking or baking process that actually occurred, in order to ensure the repeatability of the achieved result.
