And, equally importantly, if you can, should you? Some operators love their combis for their multiple cooking capabilities and ability to replace several pieces of cooking equipment. Others feel that combis should just be used to steam, poach, roast or bake and their applicability to frying, grilling or broiling is limited, at best.
